Our garden is exploding right now. We have tons of zucchini, summer squash, cucumbers, string beans (green, yellow and purple), a few peppers, and once tomatoes start to ripen...we will be buried in them too! We've even had broccoli once with dinner.
I made dill cucumber pickles today. We have had grilled summer squash a few times with dinner, but Honey isn't a huge fan of it that way. With the amount of squash and zucchini that we have...I have to get creative! Tonight I chopped up some zucchini into 1 inch squares and boiled them until they were softish. I pureed them and then added them to some well seasoned mashed potatoes. Believe it or not, it was really good! The slight green tint indicated a difference, but there wasn't a huge taste difference. I think I discovered an easy way to extend potatoes and add vitamins and fiber. Do you think Little Man will like shamrock mashed potatoes?? (That's what Honey called them) :) I found a recipe (a few actually) online for zucchini pickles. I love pickles!!! So, I think I am going to try them.
Another pioneer woman type thing..I am making an apple/rhubarb pie tonight with apples from our trees and rhubarb from our plants. So excited!! Honey asked me tonight if I was trying to become self-sufficient. Wouldn't that be awesome?! I just need a cow and some chickens and I will well be on my way! :)
